For starters, we present Maurice Dekker's documentary, "Ants on a Shrimp." The film follows René Redzepi and Noma’s other culinary staff, on their five-week journey to Tokyo to establish a pop-up restaurant. For Redzepi and his cooking team, the experiment was a unique opportunity for the world-renowned restaurant to reinvent itself. "Ants on a Shrimp" is a once-in-a-lifetime exploration of creativity, inspiration, taking chances and daring to try new ways.

After the film, we head for Restaurant Substans, where Michelin chef René Mammen, owner and Michelin star winner, tells us of his training at Noma with René Redzepi, while serving some of his special dishes. During the meal, René Mammen explains the menu and the thought and motivation behind Substans, while also sharing his insight of how to inexpensively incorporate Michelin quality and Nordic gourmet style into your home cooking.
